Beyond The Yum loves fresh fruit and although most of the posts you see here are very decadent sweet desserts, I thought it proper to serve fresh fruit today. This is the season for Apples and recent White Peaches made for wonderful fresh fruit desserts of every kind from straight up by themselves or sweet grilled peaches with honey to caramel apples on a stick. We choose the “washed and fresh” and totally love the flavors of the “Honey Crisp Apple and White Peach varieties. They are amazing! I included photos of them in my recent photoshoots…don’t they make you want to reach out and take one? Go to the orchards and pick them … it lots of fun!
Berry Berry Yummy Strawberry Cobbler
Oh My Cobbler! This is a really yummy easy strawberry dessert (or breakfast alternative), top it with whipped cream or vanilla ice cream — heavenly! This recipe has become a favorite for its ease of preparation and delish with any of your favorite berries or fruit.
1/2 cup sugar
1 tablespoon cornstarch
4 cups strawberries
2 tablespoons water
1 teaspoon lemon juice
1/4 teaspoon almond extract
1 cup Original Bisquick® mix
1/4 cup milk
1 tablespoon sugar
1 tablespoon margarine or butter, melted
1.Heat the oven to 425° F.
2.In 2-quart saucepan, mix 1/2 cup sugar and cornstarch. Stir in strawberries, water and lemon juice. Heat to boiling over medium heat, stirring constantly. Continue boiling 1 minute, stirring constantly. Add almond extract. Pour berry mixture into 8- or 9-inch (2 quart) glass baking dish.
3.In medium bowl, stir Bisquick mix, milk, 1 tablespoon sugar and melted margarine just until blended and a dough forms. Drop dough by 6 spoonfuls onto hot strawberry mixture.
4.Bake about 15 minutes or until berry mixture is bubbly and topping is light brown.*
5.Place baking dish on a wire cooling rack. Cool slightly. Serve warm.

Jacy’s Berry Berry Yummy Cobbler
6 cups tart red cherries, pitted*
1 1/4 cups sugar
1/4 cup water
4 teaspoons cornstarch
1 cup flour
1/4 cup sugar
2 tablespoons brown sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 tablespoons unsalted sweet butter
1 egg, beaten
3 tablespoons cream (milk)
Preheat oven to 400 degrees F. In a saucepan combine filling ingredients and cook, stirring until bubbling and thickened. Pour into an 8-inch square baking dish. Meanwhile, stir together flour, sugars, baking powder, and cinnamon. Cut in butter until it is crumbly. Mix together egg and milk. Add to flour mixture and stir with a fork just until combined. Drop topping by tablespoonfuls onto filling. Sprinkle with 1 tsp. sugar. Bake for 25 minutes until browned and bubbly.
*Note: [I have created with large frozen cherries or strawberries that have been completely defrosted] I have also created this with Bananas and Peaches with light powdered sugar icing — more yum!
