It’s Strawberry season so that means lots and lots of yummy strawberry desserts, fresh fruit salads and creating new recipes. We love them so much they are always a side accompaniment for dinner, wine courses, breakfast and on salads. It’s Father’s Day weekend and this is our “infamous” Strawberry Mascarpone French Toast. Jay likes the easier healthier version (this is it) which I create using sweetened mascarpone cheese and whipped cream with Splenda and side order of turkey bacon. It’s simple so try it for your Father’s Day weekend breakfast.

Here’s the simple recipe:
— Strawberries sliced, sweetened and soaked in Disaronno and sweetened with sugar or Splenda. Crush one-half of strawberries for topping (sauce-syrup).
— I use thick sliced homemade breads either rustic country, cherry, cranberry or raisin.
— Standard egg batter for French toast. (see my recipe linked below)
— Mascarpone cheese flavored with almond and crushed strawberries.
— Powdered sugar for sprinkling
Assemble: Coat one toast with thick layer of mascarpone cheese mixture and crushed strawberries. Top with second toast. Sprinkle with powdered sugar. Pour generous amount of strawberry topping over top. Top with flavored whipped cream.

p.s. We love them strawberries so much we grew them this year in our gardens. Wow, they were fabulously sweet (no need for extra sugar) and sooooo good and easy to grow (just cover with netting to keep critters out!.
