I love banana fritters of all kinds and descriptions and relish it when I create a new recipe or find one that is really delish in a new cookbook or the internet. The great thing about bananas in fritters is that you can use them fully ripe and soft or sliced. I like both and depending upon the kind of fritter determines the type. Pictured are two favorites that are terrifically yummy using the same fritter recipe with different toppings, Peanut Butter w/Roasted Honey Nuts for filling and topping and a Vanilla Rum glaze for the second batch. I also love them with Apple Butter, Powdered Sugar or Maple. My recipe is a family “secret” recipe so cannot share recipe but only photographs. Martha Stewart’s recipe is similar so sharing it as a substitute.
