Chef John Ferguson (Senior Saucier) live in action cooking up this delish recipe for the folks at the culinary demonstration at Greenbrier Gourmet, Greenbrier Resort. If you love Cajun, Creole or Southern stew dishes, then you will love this one. A yum recipe for these cold and snowy days. We were on photoshoot at the Greenbrier Resort and photographing John was an added surprise and a perfect addition photograph to the recipe. Check out my up “close and personal” stew pot below! I added a few touches to the recipe to make it “mine”! Enjoy and Bon Appetit!

BLACK-EYED PEA AND OKRA STEW

Ingredients:

1 cup diced onion
1/2 cup diced celery
1/2 cup diced green pepper
2 Tbsp garlic, chopped
2 cups diced andouille sausage
2 oz. olive oil
4 Tbsp chili powder
1 Tbsp ground cumin
1 Tbsp ground coriander
1 cup canned tomatoes, diced, juice reserved
1 cup chicken stock
1 cup frozen, sliced okra

Directions:

1. Saute the onion, celery, and green pepper in the olive oil. When cooked half way, add the andouille and garlic. When the garlic is cooked, add diced tomatoes.

2. Season all vegetables with the chili powder, cumin, and coriander. Add reserved tomato juice and black-eyed peas, and chicken stock. Simmer until fully tender. Add the okra and simmer until tender, about 5 minutes. Adjust final seasoning.

Jacy’s spicy additions:

1 Tbsp sugar
1 Tbsp mustard
1/4 cup hot sauce
1/2 stick sweetened unsalted butter
1 cup of Italian Sausage chopped
1 cup green beans
Pepper to taste
