Oh my, I love the Golden Girl tomatoes. I had the golden tomatoes last year but they cannot be compared to these yummy treats. I have two containers and tons of them (I also planted SuperSteak, Cherry Tomatoes and two other “regular” tomatoes). As far back as I can remember, my mom and also my aunts (nine just on Mom’s side) always had their tomatoes up in the window sill a day or two before they used them in recipes so I do the same. They get a ton of sun on the porch and an extra dab in the window while waiting for use which really makes them super yummy. Last night, I made a ziti pasta with them. The recipe is below… I just had to shoot a few photos of them for you.
Golden Girl Tomatoes basking in the sunny window! They even have a view of my roses…
I also root additional herbs from the garden pots in the window and replant in new containers so I have tons of fresh herbs to use, dry and freeze.
My Recipe for Golden Girl Sauce:
I created this first time last night so did not write down portions but you can use your own judgment as to amounts. DH loved it and wants it prepared again tonight.
Golden Girl Tomatoes
Fresh or Frozen Shrimp
1 pkg OxTail Chicken Broth
Garlic (fresh or powdered)
Onion (fresh or powdered)
Fresh herbs (basil, oregano, parsley)
pinch of sugar
Salt & Pepper to taste
Cook Zucchini and Squash in olive and butter until al dente; add tomatoes (quartered) and cook until tomatoes become sauce-like; add herbs, salt and pepper, sugar, stir; add shrimp (if frozen, defrost first in microwave). Stir sauce for a few minutes. Serve hot over ziti or penne pasta. Sprinkle fresh herbs on top; grate Parmasean Cheese on top.
I served with French Bread; green salad with fresh cukes and cherry tomatoes (all from my gardens!).
Enjoy and bon appetit!
